Dean doesn’t usually have time to ‘get his feet under the table’. He can be preparing dinner in a 4 star hotel one day and cooking fish and chips for the residents in a Nursing Home the next. In fact, such is his commitment that he has, on many occasions, responded to our last minute pleas for help and completed his day shift in one establishment and then travelled to another several miles away for an evening session. This he does without complaint – he is a Saint in Chefs Whites.
